Tex-mex Black Bean Dip

- 1 (15-ounce) can black beans, drained shopping list
- 1 tsp vegetable oil shopping list
- 1/2 c. chopped onion shopping list
- 2 garlic cloves, minced shopping list
- 1/2 c. diced tomato shopping list
- 1/3 c. mild picante sauce shopping list
- 1/2 tsp ground cumin shopping list
- 1/2 tsp chili powder shopping list
- 1/4 c. ( 1-ounce) shredded reduced-fat monterey jack cheese shopping list
- 1/4 c. chopped fresh cilantro shopping list
- 1 tbsp fresh lime juice shopping list
How to make it
- Place beans in a bowl; partially mash until chunky. set aside
- Heat oil in a medium nonstick skillet over medium heat. Add onion and garlic; saute 4 minutes or until tender. Add beans, tomato, and next 3 ingredients; cook 5 minutes or until thickened, stirring constantly. Remove from heat; add cheese and remaining ingredients, stirring until cheese melts. serve warm or at room temperature with fat-free or flour tortilla chips. Enjoy!
