Thai Spicy Corn Fritters

- 1 1/3 cups canned or frozen corn shopping list
- 2 red Thai chilies, seeded and very finely chopped shopping list
- 2 cloves garlic, crushed shopping list
- 10 lime leaves, very finely chopped (or 1 tbsp. grated lime peel) shopping list
- 2 tbsp. fresh cilantro, chopped shopping list
- 1 large egg shopping list
- 1/2 cup cornmeal shopping list
- 3/4 cup fresh green beans, very finely chopped shopping list
- peanut oil shopping list
How to make it
- Place the corn, green beans, chilies, garlic, lime, cilantro, egg and cornmeal in a large mixing bowl and stir to combine.
- Divide the cornmeal mixture into small balls. Flatten the balls of mixture between the palms of your hands to form rounds.
- Heat a little peanut oil in a preheated wok or non-stick skillet.
- Fry the fritters in batches until brown and crispy on the outside, turning occasionally.
- Serve immediately.
