Mississippi Mud Pie

- Pastry: shopping list
- 1 1/2 cups all-purpose flour shopping list
- 2 Tbsp sugar shopping list
- 1/2 tsp salt shopping list
- 1 egg yolk shopping list
- 2 Tbsp cold water shopping list
- 7 Tbsp chilled butter, cut into small pieces shopping list
- Filling : shopping list
- 10 Tbsp butter shopping list
- 1 oz semi-sweet chocolate shopping list
- 6 Tbsp cocoa, sifted shopping list
- 2 tsp instant coffee powder or crystals shopping list
- 3 eggs shopping list
- 1 cup sugar shopping list
- 2 Tbsp sour cream shopping list
- 3 Tbspcorn syrup shopping list
- 1 tsp vanilla extract shopping list
How to make it
- Pastry:
- Mix dry ingredients in a bowl.
- Add butter, cutting in with a pastry blender or two knives until the mixture resembles cornmeal.
- Mix egg yolk with water and add to the mixture.
- Mix until dough sticks together in small clumps.
- Shape dough into a ball and wrap in cling film.
- Chill for 30 minutes.
- After chilling, roll out the pastry on a lightly floured work top..
- Line a pie pan with the rolled out dough.
- Trim and flute the edges
- Put the pan in the refrigerator to chill while making the filling.
- Filling:
- Melt the butter in a sauce pan.
- Add the chocolate, cocoa powder and coffee, stirring until the chocolate has melted.
- In a separate bowl beat eggs and sugar until creamy and blended. Add the sour cream, corn syrup and vanilla.
- Stir in the chocolate and butter mixture.
- Pour into the pastry shell and bake for 35 to 40 min until filling has puffed up and formed a crust.
- When done remove from oven and put on a rack to cool.
- Filling will drop and may crack a little as it cools down.
