Island Macaroons

- 3c sweetened flaked coconut shopping list
- 1c unsalted macadamia nuts, chopped shopping list
- 2/3c sweetened condensed milk shopping list
- 1tsp vanilla shopping list
- 2 egg whites shopping list
- pinch of salt shopping list
- 6oz bittersweet or semi-sweet chocolate, chopped and melted. shopping list
How to make it
- Oven 350F
- Place coconut and chopped macadamia's on baking sheet. Bake until lightly toasted, stirring often, about 12 mins. Cool.
- Line 2 large cookie sheets with parchment paper, grease parchment.
- Combine condensed milk and vanilla in a large bowl. Mix in coconut and nuts thoroughly.
- Using an electric mixer beat egg whites and salt until stiff but not dry.
- Fold egg whites into coconut mixture.
- Drop by rounded tablespoon onto prepared cookie sheets.
- Bake until macaroons just turn golden brown around the edges, about 14 mins. Cool completely on cookie sheets.
- Line another cookie sheet with wax paper. Dip cookie bottoms in melted chocolate.
- Place cookies chocolate side down on prepared sheet. Chill until chocolate is set.
