Orange and Pepper Salsa

- 3 oranges shopping list
- 1 yellow bell pepper, diced shopping list
- 1 jalapeno chile (seeds and ribs removed for less heat), minced shopping list
- 2 scallions, thinly sliced shopping list
- 1 Tbsp olive oil shopping list
- 1 Tbsp white-wine vinegar shopping list
- coarse salt shopping list
- ground pepper shopping list
How to make it
- Segment the three oranges, reserving 2 tablespoons juice. Cut segments into 1/2-inch pieces.
- In a medium bowl, combine orange pieces, reserved juice, and the next 5 ingredients (bell pepper to the vinegar).
- Season with salt and pepper; toss well to combine. Serve with tortilla chips or over meat, fish, or poultry.
