How to make it

  • In a large bowl, combine the flour, sugar, baking powder, cinnamon, and ginger.
  • Stir in carrots, raisins, and nuts.
  • In small bowl, combine undrained pineapple, eggs, butter, and vanilla.
  • Stir into dry ingredients until just blended.
  • Spoon into greased muffin cups.
  • Bake at 375 degrees for 20-25 minutes.
  • Remove from pan and cool on wire rack.

    very disappointing... so i replaced the white with brown sugar, added more carrots, mixed everything in less, heated the muffin pans to make crispy and they still turned out very dense,chewy and did not rise well at all..both times
