Ingredients

How to make it

  • Put a large pot over medium heat.
  • Put in olive oil and saute your bay leaf, celery, onions, and garlic for about 4 minutes.
  • Crumble up your chipotle cubes into the pot and add corn as well as 2 cans of undrained black beans.
  • Add chili powder, cumin, and coriander. Stir this well.
  • Add in tomato sauce, tomatoes and stock.
  • Cover the pot and bring to high-heat and a boil.
  • Now add rice and bring back to a boil again. Then lower heat, cover, and let simmer until the rice is tender.

    Thanks for the recipe! I added a pound of sweet italian turkey sausage, but otherwise stuck w/ your recipe. I ate a bowl and then came back about 45 minutes later to start putting the rest up, and realized that the rice had soaked up a lot more of the broth, so now it's almost just rice and beans (still delicious!): do you have any suggestions of how to avoid this? I feel like even if I moved the stew from the cooking vessel right away, the rice would continue soaking up the liquid. I wonder if it'd taste as good if I prepared the rice on the side, maybe using some of the broth to add flavor, and just reheated it in the broth every time I want a serving? I'll probably try that next time I make this.

    I would LOVE this just the way it is,I am sure, but my hubby would wanna know where the meat is ? What do you suggest for him ?
