Sweet Potato or Pumpkin Pie

- 1 single pie crust shopping list
- 1 1/2 cups of sweet potato or pumpkin - cooked fresh or canned pur'ee shopping list
- 3/4 cup of evaporated whole milk shopping list
- 2 large egg yolks shopping list
- 1/2 cup firmly packed dark brown sugar shopping list
- 1/4 cup maple syrup shopping list
- 2 tablespoons unsalted butter - at room temperature shopping list
- 2 teaspoons pumpkin pie spice shopping list
- 3 large egg whites shopping list
How to make it
- Preheat the oven to 375 degrees
- Place pie crust into a 9 inch pie plate
- In a large bowl; beat the sweet potato or pumpkin, milk, egg yolks, sugar, syrup, butter and spice on medium speed
- In a clean medium-size bowl; beat the egg whites until stiff, but not dry
- Fold egg whites into the mixture
- Pour into the crust
- Bake for 40 minutes or until a knife inserted in the center comes out clean
- Cool on a rack for 1 hour before serving
