Slow Cooker Hunter Stew

- 1 1/2 lb of round stew meat shopping list
- 1-2 shallots sliced (depending on size) shopping list
- 2 cloves minced garlic shopping list
- 1 tbsp olive oil shopping list
- 3 cups beef broth shopping list
- 1/2 cup red wine shopping list
- 3 tbsp tomato paste shopping list
- 1 cup sliced crimini mushrooms shopping list
- 1 cup sun dried tomato halves (in a pouch) shopping list
- 1 tsp tarragon shopping list
- 1 bay leaf shopping list
- salt and pepper shopping list
- 1tbsp cornstarch dissoved in cold water shopping list
How to make it
- Brown meat in olive oil with shallots and garlic
- Place in bottom of slow cooker
- Combine beef broth, red wine and tomato paste pour over meat
- Add sliced mushrooms,sun dried tomatoes ,bay leaf , salt and pepper
- Cover and slow cook on low 6-7 hours
- Before serving. turn slow cooker to high, add tarragon and cornstarch to thicken

This was very good! I did make very small changes though so Ihope you don't mind the pic with them! I added some carrots cause I believe every meal should have a veggie (minus garlic and onions). I also just used a can of diced tomatoes in place o...more

My husband says this is now one of his favourites- Thanks! We used half a bottle of beer (Porter) though, in lieu of the red wine, as I hadn't realised we were out of red.
