Seared Sesame Beef With Wilted Greens

- 1-1/4 pound sirloin tip steak (about 1 1/2 inch thick) shopping list
- 1 lb baby spinach shopping list
- 2 tsp fresh grated ginger shopping list
- 1/4 cup red miso paste shopping list
- 1/2 cup fresh squeezed tangerine or orange juice shopping list
- 1 Tbsp canola oil shopping list
- 1 Tbsp chopped garlic shopping list
- 1 tsp crushed red pepper shopping list
- 2 Tbsp sesame seeds, mix of black and white if desired shopping list
How to make it
- In a small bowl, combine garlic, crushed red pepper and sesame seeds. Coat steak on all sides with this mixture.
- Whisk together ginger, miso paste and juice in a small bowl, set aside.
- Preheat canola oil in a large sauté pan over medium heat . Add garlic, crushed red pepper and sesame seeds and cook, stirring frequently, until toasted and fragrant, 1 to 2 minutes.
- Transfer to a small bowl.
- Increase heat to medium-high and add steak. Sear steak for 4 minutes on each side for medium rare, 6 minutes on each side for medium well.
- Transfer to a platter and spread with garlic-sesame seed mixture. Cover and let rest before slicing.
- Return pan to heat and stir in ginger-miso mixture, scraping up any brown bits from the bottom of the pan.
- Stir in spinach and toss to coat. Cook for 1 to 2 minutes until just wilted.
- To serve, divide spinach among 4 plates.
- Slice steak thinly and arrange on top of greens.
- Serve immediately.
