Light Red Beans And Rice

- 2 C chopped onions shopping list
- 2 C chopped celery shopping list
- 2 C chopped green peppers shopping list
- 2 cloves garlic, minced shopping list
- 4 Tbl. oil shopping list
- 3 Tbl. flour shopping list
- 3/4 pound ham, in 1/4-inch cubes shopping list
- 2 bay leaves shopping list
- 1 tsp. black pepper shopping list
- 2 tsp. thyme shopping list
- 1 tsp. oregano shopping list
- 1 tsp. (or to taste) cayenne pepper (or a splash of hot sauce) shopping list
- 4 C fat-free chicken broth shopping list
- 1 C water shopping list
- 2 large cans (40 1/2 oz. each) dark red kidney beans shopping list
- 6 C hot, cooked brown rice (I like to use steamed white rice) shopping list
How to make it
- Chop Onions, celery and green peppers to medium dice in a food processor.
- Combine in a bowl with garlic.
- Heat oil in a large, deep kettle.
- Add vegetables and cook and stir for 3 minutes.
- Cover and cook over low heat for 15 minutes, stirring occasionally, until very soft.
- Add flour and ham to vegetables and increase heat to medium.
- Cook and stir for five minutes.
- Add seasonings and stir well.
- Slowly stir in chicken broth and water. Simmer uncovered for 10 minutes.
- Add kidney beans and simmer for 20 minutes.
- Serve in bowls over hot rice.

This recipe is so delicious it has all of the elements I like in a bean and rice dish. That cayenne pepper adds enough heat to the dish to jazz it up.
