Black Bean Soup

- 1 box soy bacon, cooked and chopped shopping list
- 2 onions, chopped shopping list
- 2 carrots, chopped shopping list
- 2 garlic cloves, chopped shopping list
- 1 teaspoon dried thyme shopping list
- 1 tablespoon dried oregano shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon pepper shopping list
- ¼ teaspoon cayenne pepper shopping list
- 2 tablespoons tomato paste shopping list
- 6 cups veggie broth shopping list
- 4 cans (19 oz.) black beans, rinsed and drained shopping list
- 1/3 cup lime juice shopping list
- Chopped cilantro shopping list

- salsa shopping list
How to make it
- 1. Cook bacon until crisp, chop and set aside.
- 2. Cook onions and carrots, 4-5 minutes in same bacon skillet. Add garlic, thyme, oregano, salt, pepper, cayenne – cook, stirring one minute. Add tomato paste and stir thoroughly. Transfer to crock-pot; add bacon, broth and beans. Stir.
- 3. Cook low 8-10 hours or high 4-6 hours.
- 4. Stir in lime juice. In blender, puree soup in batches. Garnish with cilantro, sour cream and salsa if desired.
