Pierogi Casserole

- 10 medium potatoes, peeled, diced and boiled shopping list
- 10 oz grated cheddar cheese ( I used less, about 8 oz.) shopping list
- 8-oz. cream cheese, softened shopping list
- 1 cup butter or margarine (I used 3/4 cup, but 1/2 cup--1 stick--would be plenty) shopping list
- 4 medium onions, minced shopping list
- salt and pepper to taste shopping list
- 1 lb. lasagna noodles, cooked and drained shopping list
How to make it
- Beat together the potatoes, cheddar cheese and cream cheese until cheese is melted and no potato lumps remain.
- In a skillet, saute onions in butter until soft.
- Stir 1/3 cup of the onions into the potato mixture; salt and pepper to taste.
- Place a layer of lasagna noodles in the bottom of a greased 9x13x2-inch pan. Spread 1/3 of the potato mixture over the noodles. Repeat layers, ending with noodles.
- Pour remaining onions over all.
- Bake, covered, in a 350-degree oven until heated through, about 30 minutes.
