Versatile Chicken Hashbrown Caserole

- 3 chicken breasts - cube or shredded shopping list
- 1 (30 oz) bag of hash browns shopping list
- 1 can cream of chicken soup shopping list
- 1 c sour cream shopping list
- 1 bag (8 oz) shredded cheddar (could mix with other like Gouda?) shopping list
- 1 large onion - chopped shopping list
- Minced garlic, parsley flakes, salt & pepper, cayenne pepper to taste shopping list
- 1/2 - 1 sleeve of Ritz crackers - crushed shopping list
- Could possibly add chopped green peppers, green chilies, mushroom pieces, finely chopped broccoli (?), chopped ham or bacon for added flavor. shopping list
How to make it
- Cook chicken (w/ S&P) with chopped onion until cooked through
- Chop or shred chicken
- Mix in bowl with all remaining ingredients, save Ritz
- Press into 9 x 13 casserole dish (un-greased was fine)
- Top with crushed crackers
- Bake uncovered @ 400 for 1 hour
- This dish, like most we make was good with a little hot sauce - we suggest just a little Green Tobasco or Frontera
