Date Roll
Ingredients
- 1 cup dates, chopped - can be fresh or dried (I use dried, I always have some on hand)
- 1 tblsp powdered ginger (optional)
- 1/2 cup brown sugar
- 1 tblsp butter
- 1 tsp baking soda
- pinch of salt
- pinch of ground cinnamon
- 1 cup boiling water
- 1 1/2 cups SR flour
- Whipped Cream to top
How to make it
- Combine all ingredients in a bowl, add 1 cup boiling water, stir well.
- Fold in 1 1/2 cups SR flour. Mix well.
- Bake 25-30 minutes in moderate oven either in well-greased roll tins or bundt pan.
- Serve warm, sliced and topped with butter or cream.
- You can make enough to freeze one to have on hand for unexpected guests!
