Chocolate Fudge Squares

- 360g of real good dark chocolate shopping list
- 1 cup of condensed milk shopping list
- 2/3 cup of walnuts or pecan nuts crushed, but not powdered shopping list
How to make it
- Break chocolate in small pieces (or buy chocolate buttons) and melt them in a ban-marie set.
- After the chocolate is melted, pour in the condensed milk (continue to cook in ban-marie). Stir together until the mixture is thick enough so you can see the bottom of the bowl (or pan). Just tilt the bowl, If it's ready, the mixture will no longer stick to the bowl. This happens very quickly.
- Revome the bowl (or pan) from the bain-marie and add the walnuts or pecans. The nuts should be crushed to small pieces, but not too much so they become a powder. Mix to combine. Reserve. Let it cool a bit.
- Wash a terrine with water, but don't dry it with a cloth. Cover the interior of the terrine with clingflim leaving some hanging out so you can fold it in. Pour the mixture in the terrine, press it down to make an even and smooth surfice. Fold the hanging clingfilm to cover the fudge.
- Leave it in the refrigerator until it sets. Cut it into small squares and serve. You can dust the bars with cocoa powder if you prefer a bitter taste.
