Marinated Vegetable Salad

- 16 oz. pkg. frozen mixed vegetables, thawed shopping list
- 15 oz. can no-salt added chickpeas, rinsed and drained shopping list
- 8 lettuce leaves shopping list
- Marinade: shopping list
- 1/3 cup fat-free or low-fat Italian salad dressing shopping list
- 1/4 cup frozen unsweetened apple juice concentrate, thawed shopping list
- 2 tbsp. fresh lemon juice shopping list
- 1 tbsp. plain rice vinegar or white wine vinegar shopping list
- 2 medium garlic cloves, finely minced, or 1/4 tsp. garlic powder shopping list
- 1/8 tsp. pepper, or to taste shopping list
How to make it
- In a large bowl, combine the vegetables and chickpeas
- In a jar with a tight-fitting lid, combine the marinade ingredients.
- Shake well
- Pour over the vegetable-chickpea mixture; stir gently to coat thoroughly
- Cover and refrigerate for several hours
- Serve over the lettuce leaves
