Grilled Portobello Mushroom With Mango Chutney

- 4 portabellas mushrooms shopping list
- 1 large ripe mango shopping list
- 1 red bell pepper shopping list
- 1 jalapeno pepper shopping list
- 2 teaspoons soy sauce shopping list
- 2 teaspoons vinegar shopping list
- 1 teaspoon miso shopping list
- 1 bunch arugula lettuce shopping list
How to make it
- Carefully remove stems from mushrooms and clean thoroughly.
- Marinate in vinegar, miso, soy sauce for one hour.
- Dice mango and bell pepper then chop jalapeno and toss with vinegar.
- Clean lettuce and separate into single leaves.
- Grill the mushrooms on both sides.
- When grilling the top turn mushroom 90 degrees halfway through to get diamond pattern.
- To serve fan 3 lettuce leaves on plate and center a mushroom and top with a dollop of chutney.
