Mushroom Wafuu Pasta

- 1 tbsp dried hijiki shopping list
- 2 dried shiitake mushrooms shopping list
- 2 tbsp Japanese soy sauce shopping list
- 2 tsp sugar shopping list
- 1 tbsp rice wine vinegar shopping list
- 2 oz dry 100% buckwheat soba noodles shopping list
How to make it
- Soak hijiki and mushrooms in hot water until they are softened and swelled.
- Sliver the shiitake cap, removing the stem.
- Cook them in a cup of the soaking liquid, soy sauce, sugar and rice wine while.
- Meanwhile, boil the soba noodles until just shy of al dente.
- Toss cooked mushroom mixture into the hot noodles, and sprinkle with paprika.
