asian spiced chicken with vanilla apricot sauce

- 1# boneless,skinless chicken breasts,cut in 1/2" cubes shopping list
- 1 cup finely minced onions shopping list
- 2 Tbs. soy sauce shopping list
- 1 tsp. lemon juice shopping list
- 2 Tbs. olive oil shopping list
- 1 tsp. dried basil shopping list
- 3/4 tsp. ground ginger shopping list
- 1 tsp. ground cumin shopping list
- 1/2 tsp. black pepper shopping list
- 1 cup of fresh spinach, cut into thin strips shopping list

- vanilla apricot sauce; shopping list
- 1/2 cup apricot jam shopping list
- 1 Tbs. orange juice shopping list
- 1 tsp. vanilla extract shopping list
- 1/4 tsp. ground ginger shopping list
- 1/8 tsp. pumpkin pie spice shopping list
How to make it
- combine chicken,onion,soy saucelemon juice,olive oil and spices in a bowl,mix well and refrigerate, covered, for 15 minutes
- heat a large skillet over medium-high heat.
- add chicken mixture and marinade and cook 7-10 minutes, or until chicken in done
- drain liquid from pan
- serve over rice

- to prepare sauce; combine all ingredients in a small microwavable bowl and cook for 25 seconds(until sauce is warm)
- serve on the side or over the chicken
