GF Chicken Cordon Bleu Casserole

- 1 egg beaten shopping list
- 1 1/2 cups milk, divided shopping list
- 3/4 cup amaranth breading mix shopping list
- 2 pounds boneless, skinless, chicken breasts cut into chunks shopping list
- 1 tablespoon oil shopping list
- 8 ounces cubed swiss cheese shopping list
- 8 ounces ham, diced shopping list
- one recipe cream of chicken soup shopping list
How to make it
- Preheat oven to 350, and lightly grease a 2 1/2 quart casserole
- In a small bowl, combine egg and 1/2 cup of milk
- In another bowl, pour the breading mix
- Dip the chicken chunks into the egg and milk mixture and roll in the breading
- Heat the oil in a skillet and brown the chicken until golden brown
- Place chicken into casserole and add ham and cheese
- Prepare the soup mix and blend in the remaining milk, stirring well
- Pour mixture over the ham and cheese
- Bake in the oven for 30 minutes until bubbly.
- Let stand for 5 minutes
