Pancetta And Goat Cheese Frittata

- 8 eggs shopping list
- 1/2 tsp black pepper shopping list
- 2 tsp basil shopping list
- 4 oz goat cheese shopping list
- 6-8 oz pancetta (depends on how meaty you like it) shopping list
- 1 tsp olive oil shopping list
- 2 T yellow onion, diced shopping list
How to make it
- Beat eggs in large dish.
- Add pepper and basil and set aside.
- Cut goat cheese into small cubes. (I know it's mushy but it will keep some shape and with the cheese in cubes instead of being melted in there are bursts of flavor rather then the cheese getting lost in the egg flavor)
- Cut pancetta into thin strips.
- Heat olive oil in a medium size skillet over medium heat.
- Lightly sauté onion until translucent.
- Pour egg mixture into skillet and add pancetta.
- Once eggs begin to set add cheese.
- Cover and cook over low heat for 5 min.
- Loosen and slide onto plate.
