Freakin Awesome Quiche

- 3 regular pie shells or 2 deep-dish pie shells (I get the frozen pre-made ones) shopping list
- 1 container of egg Beaters All Whites shopping list
- 1 cup skim milk shopping list
- 1 package chopped frozen spinach shopping list
- 1 package of diced up ham from the deli section (I used 96% fat free) shopping list
- 1 red bell pepper shopping list
- 1 onion shopping list
- 10 cherry tomatoes, or 5-6 roma tomatoes (or a combination of both) shopping list
- a teaspoon olive oil shopping list
- salt, to taste. shopping list
- 1 package sliced up mushrooms shopping list
- 4 slices American cheese shopping list
- Mozzerella cheese (yes you can use string cheese!) shopping list
- Low-fat shredded cheddar cheese shopping list
How to make it
- Preheat oven to 340.
- Stick the bottoms of the pie crusts with a fork a few times. Then put them into the oven and cook them for 8-10 minutes. Meanwhile....
- Chop onion, red bell pepper, and tomatoes into small pieces. Saute in skillet with olive oil until tender. Remove from skillet when done.
- Put mushrooms in skillet and cook till done.
- Defrost frozen spinach. Squeeze excess water out of spinach.
- Dump container of egg whites into a big, big bowl. Add milk. Stir.
- Add the sauteed onion, pepper, and tomato. Add spinach. Add mushrooms. Stir again.
- Add a little salt, to taste (I use a sea salt grinder and grind about 5 times).
- Dump in ham and stir together.
- Tear apart american cheese slices and add to the mixture.
- Add mozzerella or cut up mozerella cheese stick and add to mixture.
- When all the ingredients are mixed up, use a deep spoon and spoon the mixture into the pie shells.
- Bake for 35 minutes at 340 degrees.
- Remove from oven, sprinkle shredded cheddar cheese on top. Replace quiches in oven and cook another 5-10 minutes.
