How to make it

  • Preheat oven to 450
  • Combine mango, pineapple and lime juice, salt in blender and process until well blended, but not smooth
  • Pour into bowl and stir in onion, cilantro and jalapeño
  • Toss pork, red pepper and oil in bowl
  • Mix in the spices, and toss to coat
  • Place pork and peppers on foil lined baking sheet and bake 10-15 minutes
  • Prepare appetizers using toothpicks (1 piece of pork and 1 piece of red pepper per toothpick)
  • Serve with dipping sauce
