Dotty Lemon Cake

This is a wonderfully tart lemon poppy-seed cake that has the added benefit of being mixed in the pan it’s baked in. No messy bowls to wash!
Ingredients
- 1 cup flour shopping list
- ¾ cups whole wheat flour shopping list
- 2/3 cup sugar shopping list
- 2 tbsp poppy seeds shopping list
- 1 tsp baking soda shopping list
- ½ tsp salt shopping list
- ¾ cup water shopping list
- 2 tbsp olive oil shopping list
- 2 tbsp grated lemon peel shopping list
- 3 tbsp lemon juice shopping list
How to make it
- Heat oven to 350F.
- Mix flours, sugar, poppy seeds, soda and salt in an un-greased 8” square pan.
- Stir in remaining ingredients.
- Bake 40 minutes.
- Cool in pan 10 minutes, un-mould onto wire rack and cool completely.
