How to make it

  • In a large no-stick frying pan over medium heat, warm the oil for 1 minute. Add the chicken and saute for 5 minutes per side. Remove to a plate.
  • Add the tomatoes, garlic, and vinegar and water to the pan. Cover and cook for 5 minutes, or until the tomatoes are softened and have given up some of their juice. Add the chicken, cover, and cook for 5 minutes, or until the chicken is cooked through. Sprinkle with the basil.
  • Cooking time: 20 minutes
  • Per serving: 149 calories, 2.7 g. fat (17% of calories), 0.8 g. dietary fiber, 66 mg. cholesterol, 80 mg. sodium
