Tuscany Chicken

- 1 tsp olive oil shopping list
- 4 boneless, skinless chicken breast halves (4 ounces) shopping list
- 2 tomatoes, sliced shopping list
- 1 clove garlic, minced shopping list
- 2 tbsp red wine vinegar shopping list
- 2 tbsp water shopping list
- 2 tbsp minced fresh basil shopping list
How to make it
- In a large no-stick frying pan over medium heat, warm the oil for 1 minute. Add the chicken and saute for 5 minutes per side. Remove to a plate.
- Add the tomatoes, garlic, and vinegar and water to the pan. Cover and cook for 5 minutes, or until the tomatoes are softened and have given up some of their juice. Add the chicken, cover, and cook for 5 minutes, or until the chicken is cooked through. Sprinkle with the basil.
