Gf High Protein Madeleine

- 2 tablespoons unsalted butter, melted shopping list
- 2 eggs, separated shopping list
- 1/2 teaspoon flavoured liquid stevia (I use hazelnut) shopping list
- 2 tablespoons peanut butter shopping list
- 1/2 cup rolled oats (gluten free for celiacs) shopping list
- 1/4 cup whey protein isolate shopping list
- 1/4 cup powdered skim milk shopping list
- 1/4 teaspoon cinnamon shopping list
- 1/8 teaspoon baking soda shopping list
- 1/4 cup chocolate chips shopping list
How to make it
- Preheat oven to 350 degrees Fahrenheit
- Spray Madeline tin with Pam, or cover a cookie sheet with parchment paper.
- Melt butter in microwave; mine is one minute on “low”
- Whip egg whites for four minutes until stiff. My stand mixer is handy for this.
- Combine all dry ingredients except chocolate chips
- Mix together all wet ingredients including the melted better (but not the egg whites)
- Mix the wet and dry, incorporating the chocolate chips.
- This will be a stiff dough. Fold in the egg whites gently. I ended up using my hands. Now you have a free flowing batter.
- Fill the Madeleine tin or drop by tablespoon on to cookie sheet.
- The batter will puff up satisfyingly so leave plenty of room.
- Bake for ten minutes.
