Potato Leek Soup

- 2 qts chicken stock or ham broth shopping list
- 8 large potatoes, peeled and sliced shopping list
- 4 leeks, sliced 1/2 inch thick shopping list
- 1/4 c butter shopping list
- salt and pepper to taste shopping list
How to make it
- Melt butter in a heavy skillet over medium heat. Add sliced leeks, white part only, and saute`. Bring broth to a boil in a large pot. Add leeks nd simmer approximately 45 minutes. Add sliced potatoes and cook 20-25 minutes longer. Before serving, top each bowl of soup with some crumbled bacon, if desired. Serve with toasted French bread.
- *I like it best made with ham stock, but it's good either way.
