Simple Sautéed Green Beans And Pancetta With Butter

- 2tbsp Extra Virgin Olive Oil shopping list
- ½oz butter shopping list
- 60g/2oz Pancetta - shredded into strips shopping list
- 400g/14oz Green beans - prepared and cut into 2.5cm/1in lengths shopping list
- 3tbsp Red Pepper - cut into strips shopping list
- 1tbsp Green Pepper - cut into strips shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Bring a pot of lightly salted water to a boil, add the beans and cook for some 3 minutes or so ensuring they don’t change colour and retain some bite;
- Drain, drop into ice cold water to stop cooking process and drain again;
- Set aside;
- Warm the oil in a wok/sauté pan over a medium to high heat, add the pancetta/bacon and sauté for some 4 to 5 minutes or so or until all strips crispy;
- Remove and set aside
- Add the beans to the pan and cook, stirring occasionally, for a further 3 minutes or so or until the beans are cooked through but still with some bite;
- Add the peppers to heat through then add and melt the butter, season to taste and sprinkle the pancetta over the top;
- Serve.
