How to make it

  • Bring a pot of lightly salted water to a boil, add the beans and cook for some 3 minutes or so ensuring they don’t change colour and retain some bite;
  • Drain, drop into ice cold water to stop cooking process and drain again;
  • Set aside;
  • Warm the oil in a wok/sauté pan over a medium to high heat, add the pancetta/bacon and sauté for some 4 to 5 minutes or so or until all strips crispy;
  • Remove and set aside
  • Add the beans to the pan and cook, stirring occasionally, for a further 3 minutes or so or until the beans are cooked through but still with some bite;
  • Add the peppers to heat through then add and melt the butter, season to taste and sprinkle the pancetta over the top;
  • Serve.
