Oatmeal Spice Pancakes W/ Peach Compote

- 3 peaches shopping list
- 1 Tablespoon Splenda brown sugar Blend shopping list
- 1 Tablespoon lemon juice shopping list
- 1 Star Anise shopping list
- 1 Teaspoon vanilla extract shopping list
- 1 1/2 cups oat flour (I chop up my dry minute oatmeal in the blender) shopping list
- 2 Tablespoons Truvia (Stevia crystals) shopping list
- 1 Tablespoon baking powder shopping list
- 1/4 Teaspoon allspice shopping list
- 1/4 Teaspoon nutmeg shopping list
- 20 grams debittered brewer's yeast shopping list
- 2 Omega eggs shopping list
- 1/2 cup puréed peaches shopping list
- 1 1/2 cups 1% milk shopping list
- 3/4 cups white flour shopping list
- 2 Tablespoons liquid coconut oil shopping list
How to make it
For the compote
- Roughly chop the three peaches
- In a saucepan stir together the peaches, brown sugar, lemon juice, star anise, and vanilla extract
- On medium heat bring the mixture to a steady simmer, stirring occasionally
- Allow the compote to reduce to your desired richness, about ten minutes
The Pancakes
- Stir together the dry ingredients; oat flour, white flour, truvia, baking powder, brewer's yeast and spices.
- In a separate bowl whisk together the eggs, peach purée and milk. Add quickly in to the dry mixture and mix until just combined. There will be lumps.
- Heat a griddle on medium low heat, and brush with a little coconut oil.
- Drop batter by heaping tablespoons on to the griddle, and flip when well browned. Allow the pancake to brown on the second side.
- Serve with peach compote and Greek yogurt.
- I sprinkled a little icing sugar for the photo.
