Shrimp Stuffed Mushrooms

- 2 Tblsp. butter shopping list
- 2 Tblsp minced green onion shopping list
- 12 med.shrimp chopped shopping list
- 1/2 cup dry Italian seasoned bread crumbs shopping list
- 1/4 cup shredded Monterey Jack cheese shopping list
- 1 egg, beaten shopping list
- 1 tsp. lemon juice shopping list
- 1/2 tsp. dried dill weed shopping list
- 4 Tblsp. melted butter shopping list
- 1 Lb. package med. to large size button mushrroms, stems removed shopping list
- 1/2 cup shredded Monterey Jack cheese shopping list
- 1/4-1/3 cup dry white wine shopping list
How to make it
- Preheat oven to 400 degree F.
- Melt butter in skillet and cook green onion about 1 minute. Add shrimp and cook another 2 mins or until shrimp is just done.
- Transfer to a bowl and mix in breadcrumbs, 1/4 c. cheese, egg, lemon juice and dill weed.
- Pour melted butter into ovenproof pan and turn mushrooms to coat. Stuff each mushroom cup with the shrimp mixture and top with more cheese. Pour the wine into the pan.
- Bake until cheese is melted and light brown; about 15-20 minutes.
