Cabbage Roll Soup

- 1 large onion, diced shopping list
- 3 cloves garlic, minced shopping list
- 1 lb lean ground meat (beef, turkey, italian sausage, your prefer) shopping list
- ½ lb lean ground pork (sausage or just pork, turkey if not used above) shopping list
- ¾ cup uncooked long grain rice (wild rice preferred, or even quinoa) shopping list
- 1 medium head cabbage, chopped (core removed)(blend core up and add it anyway) shopping list
- 1 (28 ounce) can diced tomatoes shopping list
- 2 tablespoons tomato paste shopping list
- 4 cups beef broth shopping list
- 1½ cups V8 or other vegetable juice shopping list
- 1 teaspoon paprika shopping list
- 1 teaspoon thyme shopping list
- 1 tablespoon Worcestershire sauce shopping list
- 1 bay leaf shopping list
- salt and pepper, to taste shopping list
How to make it
- In a large pot, brown onion, garlic, pork and beef.
- Drain any fat.
- Stir in chopped cabbage and let cook until slightly softened (about 3 minutes).
- Add all remaining ingredients, bring to a boil and reduced heat to medium low.
- Cover and simmer on low until rice is fully cooked (about 25-30 minutes)
- Remove bay leaf and serve.
