How to make it

  • 1. Grate the cucumber, sprinkle with salt
  • 2. Drain through a fine mesh sieve overnight in the fridge
  • 3. Squeeze cucumber in your hands to remove as much water as
  • possible
  • 4. Combine the yogurt, garlic, oil, and lemon juice, in a large bowl
  • 5. Cover and refrigerate overnight
  • 6. Transfer the grated cucumber and fresh dill to the yogurt mixture
  • 7. Stir to combine let sit for at least 2 hours for tastes to combine
  • 8. Serve chilled with pita bread for dipping or use as sauce for meats
  • 9. Tastes great in sandwiches made with half Pita pockets
