Tzatziki Dipping Sauce

- • 1 large English cucumber, peeled and seeded shopping list
- • 16 oz. container plain full-fat or fat-free Greek yogurt shopping list
- • 4 large garlic cloves, finely minced shopping list
- • 2 Tablespoons extra virgin olive oil shopping list
- • 1 lg. lemon, juiced (about 3 T) shopping list
- • 1/2 teaspoon coarse ground salt (sea or Kosher) shopping list
- • 1 Tablespoon minced fresh dill shopping list
How to make it
- 1. Grate the cucumber, sprinkle with salt
- 2. Drain through a fine mesh sieve overnight in the fridge
- 3. Squeeze cucumber in your hands to remove as much water as
- possible
- 4. Combine the yogurt, garlic, oil, and lemon juice, in a large bowl
- 5. Cover and refrigerate overnight
- 6. Transfer the grated cucumber and fresh dill to the yogurt mixture
- 7. Stir to combine let sit for at least 2 hours for tastes to combine
- 8. Serve chilled with pita bread for dipping or use as sauce for meats
- 9. Tastes great in sandwiches made with half Pita pockets
