Crock Pot Stuffed Bell Peppers

- • 4 large bell peppers. shopping list
- • 1 lbs, very lean, raw ground chuck. shopping list
- • 2 cups cooked wild rice, cooked. shopping list
- • 2 cups chicken or vegetable stock, or 1 cup stock and 1 cup beer. shopping list
- • 1 ½ cup diced tomatoes, divided. Can sub canned. shopping list
- • 1 medium onion chopped. shopping list
- • 2 cloves garlic, minced. shopping list
- • 2 cups shredded cheddar cheese or cheese blend. shopping list
- • 1 egg. shopping list
- • ½ tsp. Oregano. shopping list
- • 1 tsp. Worcestershire sauce. shopping list
- • 1 tsp salt. shopping list
- • 1/2 tsp pepper. shopping list
How to make it
- 1. Cut the tops off the pepper and removed seeds and ribs from inside.
- 2. In a large mixing bowl, combine ground beef, cooked rice, ¾ cup of chopped tomatoes, onion, Oregano, Worcestershire sauce, garlic, cheese, egg, salt and pepper.
- 3. Mix well until evenly combined.
- 4. Stuff peppers with mixture and place into crock pot, stuffed side up.
- 5. Pour stock over and around peppers.
- 6. Next, pour the rest of the tomatoes in.
- 7. Cover and cook on HIGH for 4-5 hours or LOW for 6 hours.
- I really like a crispy top and sorta charred sides on my stuffed bell peppers so when they’re finished in the crock pot I pop them in the broiler for a couple-three minutes.
