Meat Loaf, Al Italiano

- 11 oz lean ground pork shopping list
- 18 oz lean ground beef shopping list
- 1 lg egg, beaten shopping list
- 1/2 cup finely chopped onion shopping list
- 3 oz chopped mushrooms, about 1 cup shopping list
- 1/2 cup chopped red pepper shopping list
- 1 large clove garlic, finely chopped or 1 tsp micro planed shopping list
- 1 tsp Italian seasoning shopping list
- 1/2 cup Italian flavoured bread crumbs, with Romano cheese shopping list
- 3-4 sprigs Italian parsley, finely chopped shopping list
- Oil, as needed shopping list
- Glaze, optional shopping list
- 1/4 cup tomato sauce shopping list
- 1 tsp Dijon mustard, I like Maille shopping list
- 1 tsp dark brown sugar shopping list
- 1 tsp vinegar shopping list
How to make it
- Preheat oven to 350ยบ
- Add a small amount of oil to a skillet , warm and add the mushrooms, pepper and onion.
- Cook on med. heat for 3-4 mins or until just soft.
- Add the garlic and cook until fragrant, about 30 seconds
- Set aside and let cool.
- In a large bowl mix the egg, bread crumbs and parsley, mix well.
- Add the cooled veggies, mix.
- Add the ground meats and mix, gently.
- Place the mixture into a loaf pan and form into a loaf shape.
- Bake for 1 hour and 15 minutes or until the temp is 160 at the thickest part.
- Drain excess oil occasionally.
- Brush on the glaze, if using, when the loaf has been in the oven for 45 minutes.
- Brush again every 10-15 minutes.
- Let rest, loosely covered with foil, for 10 minutes before cutting.
