Antipasto Pasta Salad

- 1 pound pasta, seashell variety shopping list
- 1/4 pound pepperoni sausage, diced shopping list
- 1/4 pound genoa salami, diced shopping list
- 1/2 pound asiago cheese, finely chopped shopping list
- 1 (6 oz) can black olives, liquid removed and chopped shopping list
- 1 green bell pepper, chopped shopping list
- 1 red bell pepper, finely chopped shopping list
- 3 tomatoes, diced shopping list
- 3/4 cup extra virgin olive oil shopping list
- 1/4 cup balsamic vinegar shopping list
- 1 tbsp parmesan cheese, grated shopping list
- 1 (.7 oz) packet dry Italian-style salad dressing mix shopping list
- 2 tbsp dried oregano shopping list
- 1 tbsp dried parsley shopping list
- salt and ground black pepper, to taste shopping list
How to make it
- In a large pot of salted water, boil the pasta until al dente. Drain, and run under cold water to cool.
- Mix together the cooled pasta, pepperoni sausage, salami, Asiago cheese, black olives, peppers and tomatoes. Add in the dressing mix then cover, and place in the refrigerator for at least 1 hour.
- To make the dressing, whisk together the olive oil, balsamic vinegar, Parmesan cheese, oregano, parsley, salt and pepper. Right before serving, add the dressing onto the salad, and mix thoroughly.
