High Talking Chief Banana Nut Bread

- • 1 cup raw sugar . shopping list
- • 1/2 cup butter, softened. shopping list
- • 2 eggs, lightly beaten. shopping list
- • 1 1/2 cups mashed, very ripe bananas (3 to 4 medium). shopping list
- • 1/2 cup buttermilk. shopping list
- • 1 teaspoon vanilla. shopping list
- • 2 1/2 cups all-purpose flour. shopping list
- • 1 teaspoon baking soda. shopping list
- • 1 teaspoon salt. shopping list
- • ¼ cup dark rum. shopping list
- • 1 cup chopped nuts. shopping list
How to make it
- 1. Go out back and cut a stalk of bananas. See Photo
- 2. Cut down the tree.
- 3. Claim a couple hands for yourself.
- 4. Put your oven racks to the bottom third of the oven; heat to 350º F. Grease the bottom of a 9 x 5 x 3 loaf pan.
- 5. Cream the sugar and butter together in a large bowl with an electric mixer See Photo. Add the eggs and blend; then add the bananas, buttermilk, rum and vanilla. Beat until smooth.
- 6. Sift or stir together the flour, baking soda and salt. Add to the banana mixture and stir until moistened. Stir in the nuts, if using.
- 7. Bake for about 1 1/4 hours, or until a toothpick inserted into the center comes out clean.
- 8. Cool 10 minutes, then remove the bread from the pan to a wire rack to cool. Cool completely. See Photo
- To store, wrap in plastic wrap, it will stay on the counter for up to 3 days. If it lasts that long.
