Crockpot Au Gratin Potatoes

- 8 medium potaotes, peeled and sliced into 1/4” slices (I used Russets) shopping list
- 2 medium onions, sliced into rings (I did a rough chop – personal preference) shopping list
- salt shopping list
- pepper shopping list
- 6 Tbs butter shopping list
- 6 Tbs flour shopping list
- 1 tsp salt shopping list
- 4 cups milk shopping list
- 3 cups cheddar cheese, shredded shopping list
How to make it
- Spray a 3 to 5 quart crockpot with cooking spray. I used a liner and sprayed it with canola spray. I really recommend a liner.
- Place half of the potato slices in the bottom of the crockpot. Season with salt and pepper. Place half of the onions as a layer over the potatoes. Repeat with remaining potatoes and onions, seasoning the potatoes. See Photo
- In a medium saucepan, melt butter over medium heat. Add flour and salt and whisk together and cook for one minute, whisking all the while.
- Whisk in milk and cook until slightly thickened, approximately five minutes, whisking often.
- Add cheese and whisk until melted. See Photo
- Pour sauce over potatoes and onion in the crockpot.
- Set heat to Low. Cover and cook for 5 to 6 hours or until potatoes are tender. See Photo
- If you aren't happy with the color of the potatoes (they won't all get brown as when baked) you could always sprinkle some paprika on top before serving.
