Apricot Hummus Balls

- 1 and 1/2 cup(625ml) cooked or canned chickpeas shopping list
- 1/2 cup(125ml) chopped dried apricots shopping list
- 3 tbsp(45ml) tahini shopping list
- 2 tbsp(30ml) extra virgin olive oil shopping list
- juice of 1/2 lemon shopping list
- 1 tbsp((15ml) chopped fresh rosemary shopping list
- 1 garlic clove chopped shopping list
- 1/2 tsp(2ml) salt shopping list
- 1 cup(250ml) plain yogurt shopping list
- 1 tsp(5ml) lemon zest shopping list
- 3/4 tsp(4ml) smoked paprika shopping list
How to make it
- Preheat oven to 350*F(180 C)
- Place chickpeas in food processor and process until crumbly
- add apricots,tahini,oil, lemon juice,rosemary, garlic and salt
- blend until mixture is moist and comes together
- roll in 1 inch(2.5cm) balls and place on parchment paper lined baking sheet
- Bake for 12 minutes
- In serving bowl stir together yogurt, lemon zest and smoked paprika
- To serve, insert toothpicks into hummus balls and serve along side yogurt dip.
- For those who can't have dairy, replace the plain yogurt with lactose free vanilla yogurt.
