Duchesse Potatoes

- 2 ½ pounds potatoes shopping list
- ½ cup butter, I use Earth Balance shopping list
- 1 whole egg shopping list
- 2 egg yolks, lightly beaten shopping list
- salt shopping list
- pepper shopping list
How to make it
- 1. Peel the potatoes, cut them into pieces and put in a pan. Cover with cold salted water. Bring to a boil and simmer until tender. Drain, put back in pot over the heat, shaking the pan until potatoes are dry.
- 2. Work through a sieve, potato ricer or mash. Add the butter, egg and salt and pepper. Beat the mixture until fluffy. I use my emersion blender.
- 3. Put mixture in a pastry bag (zip lock with hole cut at corner) . Pipe small amounts on a buttered cookie sheet. Brush with the egg yolks.
- 4. Bake at 350 until they are golden (about 10 Minutes)
