Fried Rice

- 2 Cups pre cooked rice shopping list
- 1 Lb shrimp shelled and viened and split in half rinse in cold water place in a strainer over a bowl so to allow to drain and gather the drippings shopping list
- 6 Feung cheung diced fine (Chinese sausage) or cooked bacon shopping list
- 6 Cups chicken stock or broth shopping list
- 4 Garlic cloves minced fine shopping list
- An equal amount of ginger minced fine shopping list
- 4 Eggs scrambled loosely shopping list
- 1 Tsp sesame oil shopping list
- Olive, canola or vegetable oil shopping list
- butter unsalted shopping list
- Fresh ground black pepper shopping list
- Salt just a touch to enhance the flavors shopping list
- 6 to 8 Scallions diced shopping list
How to make it
- Heat a deep pot with a little oil and 1 tbsp of. When the oil is hot add the 2 cups of rice and coat the rice with the oil. When the rice is fully coated add the garlic & ginger allow to cook a few minutes constantly mixing to prevent scorching. Now take the reserved shrimp juice and add it to the rice add just a touch of salt and pepper and mix well.Add the stock or broth and bring the rice to a boil. When the rice reaches a boil mix one final time. Reduce it to a light simmer cover and allow to cook for about 18 minutes. Do not open the pot. When done fluff the rice with a fork a spoon will cause clumping.
- Fry the minced sausage in a wok or deep sauce pot with a little oil until crisped remove the minced sausage and reserve in a bowl for later.
- Sear the shrimp until slightly undercooked and reserve in a bowl for later..
- In a bowl scramble the eggs to and cook them in a frying pan with a touch of butter keep the egg soft slightly under cooked when done reserve in a bowl.
- If yo have a wok heat the wok on a medium flame if no wok use a large pot. Using oil, or cooking spray treat the wok or pot to prevent sticking. And put all the reserved ingredients in. Now 1 cupful a a time add some rice constantly stirring. Add a touch of sesame oil. Keep adding the rice until you reach the desired consistency of rice and ingredient you are happy with. Mix well and put it into a serving bowl. Add the chopped scallions and taste add salt if needed but not likely.
