Carrot Cake With Cream Cheese Icing

- For the cake shopping list
- 2 1/2 cups all purpose flour shopping list
- 2 cups white granulated sugar shopping list
- 1 1/4 cups vegetable oil shopping list
- 1/3 cup milk shopping list
- 2 teaspoons baking powder shopping list
- 2 teaspoons cinnamon shopping list
- 1 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 4 eggs shopping list
- 4 cups grated carrots shopping list
- For the icing shopping list
- One 8 ounce cream cheese softened shopping list
- 4 tablespoons butter softened shopping list
- 1 teaspoon vanilla shopping list
- 1 1/2 cups icing sugar shopping list
How to make it
- Preheat oven to 325°
- Put all the ingredients except the eggs and carrots in a large bowl.
- Mix together with a wooden spoon,once mixed add the eggs one at a time beating after each addition
- add the carrots and mix until it comes together
- Pour the batter into a greased bunt pan and bake for one hour and 10 minutes
- Let the cake cool for about 10 to 15 minutes before taking it out of the pan
- For the icing
- Using a hand beater or a KIA mixer cream butter and cream cheese together
- add the vanilla then add the icing sugar a little at a time and beat until fluffy
- When the cake is cold ice it with the cream cheese icing
- When I make this cake for my family I use Earth balance spread in place of butter and lactose-free milk in place of the milk. I do not put the icing on my own piece
- of cake as I am lactose intolerant.

This was so very good. Other than subbing Becel for the oil I made this exactly as written. Great recipe Manella, this will be my go to recipe for carrot cake from now on. Thanks a bunch.
