Stuffed Zucchini

- one medium zucchini, about 7-8 inches long shopping list
- scant 1/4 lb. bulk sweet Italian sausage (you can use spicy if you like) shopping list
- minced garlic, to taste shopping list
- salt and pepper, to taste shopping list
- 1 large egg, lightly beaten shopping list
- quick-cooking oats, to taste (I don't really measure this, but if I had to guess, it looks like about 1/4 C. or so) shopping list
- shredded Parmesan cheese, to taste (that's about 1 small handful for me) shopping list
- 2-3 C. marinara sauce (I like to use my homemade sauce, but the jarred stuff works, too) shopping list
- shredded Mozzarella cheese shopping list
How to make it
- Heat oven to 350 degrees. Cut the zucchini in half lengthwise and scoop out the insides, leaving a 1/4-inch shell and reserving the insides. Chop the reserved pulp and set aside. In a large skillet, brown sausage and drain any grease well. Add the resrved zucchini pulp, cover, and cook until the zucchini is soft, stirring occasionally (you don't want it to brown, just soften). Stir in minced garlic, salt, and pepper. Remove from heat and cool a few minutes. Stir in egg, quick oats, Parmesan cheese, and enough marinara sauce to moisten. Stuff the zucchini shells with the meat mixture. Place the shells in a greased shallow baking dish (I find it easier to place the shells in the baking dish first and then stuff them in case any of the filling spills over). Spoon a small amount of sauce over the tops of the stuffed zucchini halves and pour remaining sauce around them. Cover and bake 50-60 mins, until zucchini is tender. Sprinkle servings with additional Parmesan or shredded Mozzarella cheese, if desired, and bake another few mins, until cheese melts.
- Note: This is amazingly filling, especially when served with salad and garlic bread. One zucchini is enough for the two of us to share for one meal. Increase the ingredient amounts to make the desired number of servings.

This is a very tasty dish. I did a couple of changes, i had brown rice in the fridge i needed to use up so i used it in place of oats.
I can't have the cheese so i left it out, and like Bakerme i used my own homemade sauce.Even with the change...moreeastcoaster in loved it
