Banana Power Bars

- 2 large, overripe bananas shopping list
- ¼ cup melted coconut oil shopping list
- ⅓ cup unsweetened applesauce shopping list
- ¼ cup sugar shopping list
- ¼ cup Truvia Baking Blend shopping list
- ½ tbsp vanilla extract shopping list
- 1 cup old-fashioned rolled oats shopping list
- 1 cup toasted soy flour (kinako) or ground TVP shopping list
- ⅓ cup gluten flour shopping list
- ¼ cup ground tigernuts (or almonds) shopping list
- ¾ tsp baking powder shopping list
- ½ tsp salt shopping list
- ½ tsp ground cinnamon shopping list
- ½ tsp ground nutmeg shopping list
- ¼ tsp baking soda shopping list
- ¼ cup chocolate chips shopping list
How to make it
- Preheat the oven to 350°. Coat a 9” square baking dish with cooking spray.
- Mash the bananas, oil, applesauce, sugar, Truvia and vanilla in a large bowl until smooth.
- Add the oats, flours, tigernuts, baking powder, salt, cinnamon, nutmeg, and baking soda. Stir until just combined.
- Spread in the pan and top with chocolate chips.
- Bake for 25 to 30 minutes, or until a toothpick inserted comes out clean.
- Cool completely before cutting into bars.
