Garlic Parmesan Roasted Chickpeas

- 2 15 1/2-oz cans chickpeas (aka garbanzo beans), drained and rinsed i roughly tossed to get most "skins" off, and pat dry. shopping list
- 1 tbsp olive oil shopping list
- 1 tsp minced garlic shopping list
- 1/2 tsp sea salt shopping list
- Fresh ground black pepper, to taste shopping list
- 1/2 cup grated Parmesan cheese shopping list
How to make it
- Preheat oven to 400°F. In a medium bowl, combine oil, garlic, salt and pepper. Add cheese and stir until crumbly and oil is absorbed. Add chickpeas and toss to coat.
- Spread on a baking sheet and bake for 45 to 50 minutes. Toss in pan every 5-10 minutes to prevent burning. Bake until golden and crispy. Let cool. Will be very hot!
