How to make it

  • First, make the simple syrup, which is just as simple as the name implies. Just put the sugar (or stevia) into 1/2 cup of water and let it boil until most of it evaporates. (Stirring occasionally) Add the extract (you can sub it for almond extract, or vanilla, or orange, or whatever towards the end, cook for another minute and then transfer to a heat-proof container so it can thicken. (or leave the extract out entirely. What I did was put coconut extract in to sweeten it without the use of sugar, then added coconut milk on top of it after it was done so it was very coconutty. You make it you own.)
  • For the boba, let a pot of water come to a very rapid boil. Add about 1/2 cup of the dried boba pearls, stir and cover. Cook for about 5-6 minutes, then taste one of them to make sure it's not ultra-doughy on the inside. They should be twice the size and gummy like candy, but not too sweet. That's what the syrup is for!
  • When the boba is done, strain them and put them into the container with the syrup, which should be plenty thick and sweet by now. Mix thoroughly and let that sit for a few minutes.
  • Using 1 cup of not quite boiling water, steep the tea (or teabag) for 5 minutes. If you're using milk tea, you don't have to add extra milk if you don't want to. I did.
  • Put the now sweetened boba along with any extra syrup into a tall glass along with some ice. Strain the tea and add that in there as well. If desired, add about 2 tsp of condensed milk, then another cup or so of cold, filtered water.
  • Add the milk of your choice if your tea doesn't come with it. Mix very well. (I've seen some places use a cocktail shaker, this is a good idea!)
  • When blended, add the straw, drink and enjoy. Feel free to mess with the measurements until it suits your tastes. Yum seng!
