Small Batch Chocolate Peanut Butter Doughnuts

- 2 1/2 tbsp smooth peanut butter (not natural, unsweetened or salt free) shopping list
- 3 tbsp brown sugar shopping list
- 1/3 cup unsweetened vanilla almond milk shopping list
- 2 tsp vanilla shopping list
- 5 tbsp spelt flour shopping list
- 1 tbsp cocoa powder shopping list
- 1 tsp ground flaxseed shopping list
- pinch nutmeg shopping list
- 1/2 tsp baking powder shopping list
- pinch salt shopping list
- 2 tsp miniature chocolate chips shopping list
How to make it
- Preheat oven to 350°F and grease 4 wells of a doughnut pan.
- Beat together the peanut butter and brown sugar until creamy.
- Stir in the almond milk and vanilla until well combined.
- Mix in the flour, cocoa, flaxseed, nutmeg, baking powder and salt.
- Spoon the batter into the pan and sprinkle with chocolate chips.
- Bake for 13-14 minutes, until the doughnuts feel firm and spring back when you gently press them.
- Leftovers freeze well and can be quickly re-warmed in the microwave.
