Elote Dip

- 2 tablespoons unsalted butter shopping list
- 5 ears corn, shucked and rinsed shopping list
- 1 jalapeño, seeded and diced shopping list
- 3 tablespoons real mayonnaise shopping list
- 2 tablespoons crumbled cotija cheese (I also use Feta) shopping list
- 2 tablespoons chopped fresh cilantro leaves shopping list
- 1 teaspoon chili powder, or more, to taste shopping list
- Dash of salt and pepper shopping list
- 1 clove garlic, pressed shopping list
- Juice of 1 lime shopping list
How to make it
- Melt butter in a large skillet over medium high heat. Add corn kernels and jalapeño, and cook, stirring occasionally, until cooked through and slightly charred, about 8-10 minutes.
- Stir in mayonnaise, cotija, cilantro, chili powder, garlic and lime juice. Dash of salt and pepper.
- Serve immediately.
