Chocolate Zucchini Brownies

- 1 tbsp Kahlua (or coffee) shopping list
- 1 tbsp vanilla extract shopping list
- ½ cup brown sugar shopping list
- 6 packets Truvia (or ¼ cup sugar) shopping list
- ½ cup Prune Puree shopping list
- 1 cup spelt flour shopping list
- 3 tbsp ground flax seed shopping list
- ½ cup cocoa shopping list
- ½ tbsp baking soda shopping list
- ¼ tsp salt shopping list
- 2 cups shredded zucchini shopping list
- 1 (3.5 oz) bar bittersweet chocolate, chopped small shopping list
- ¼ cup chopped hazelnuts or walnuts (optional, not included in NI) shopping list
For Topping (optional)
- Chocolate Sweet Potato Frosting shopping list
How to make it
- Preheat the oven to 350 F and line an 8" pan with parchment paper.
- In a large bowl, mix together the Kahlua, vanilla, sugar, Truvia and prune puree.
- Add the flour, cocoa, baking soda and salt and gently stir until combined. Do not over mix!
- Fold in the zucchini, chocolate chips and nuts (if using).
- Bake for 30 - 35 minutes.
- Store in an airtight container in the refrigerator.
