How to make it

  • Preheat the oven to 350 F and line an 8" pan with parchment paper.
  • In a large bowl, mix together the Kahlua, vanilla, sugar, Truvia and prune puree.
  • Add the flour, cocoa, baking soda and salt and gently stir until combined. Do not over mix!
  • Fold in the zucchini, chocolate chips and nuts (if using).
  • Bake for 30 - 35 minutes.
  • Store in an airtight container in the refrigerator.

    This does sound good! My only question is where to find prune puree - of is this something I would have to make? With an overload of zucchini, I hope to make this soon!

    This sounds really good. 2 questions, may I exclude the flax seed? The prune puree is made with fresh or dried prunes?
