South Of The Border Pork Fried Rice

- 1 Tbsp olive oil shopping list
- 1/2 cup diced onion shopping list
- 1 stalk celery, diced shopping list
- ½ cup chopped carrot shopping list
- ½ cup diced bell pepper – any color(s) shopping list
- 1 clove garlic, minced shopping list
- 1 seeded and chopped jalapeno shopping list
- 1 Tbsp butter shopping list
- 1 cup cooked brown rice shopping list
- 1 tsp Mexican oregano shopping list
- 1 tsp cumin shopping list
- ¼ tsp chipotle chili powder shopping list
- ¼ tsp cayenne shopping list
- salt & pepper shopping list
- 1 cup diced cooked pork shopping list
- ¼ cup chicken stock or water shopping list
- ¼ cup chopped cilantro shopping list
- lime wedges shopping list
- chopped avocado, scallions, tomatoes and sour cream for garnish shopping list
How to make it
- Heat oil in skillet over medium heat; add onion, celery and carrot and cook until carrot is just starting to get tender (about 5 minutes)
- Add garlic and jalapeno; cook 2-3 minutes; add butter. When butter is melted, add rice, oregano, cumin, chili powder and cayenne. Season to taste with salt & pepper. Add pork and stock; cover and cook about 5 minutes or until pork is heated through. Stir in cilantro.
- Garnish as desired with avocado, tomatoes, scallions and/or sour cream; squeeze a bit of lime juice before serving.
